This Pacas Natural produced by Carlos Pola has been one of our favorites for many years. Pacas is a natural mutation of Bourbon discovered on the Pacas family farm and known as a classic El Salvadoran variety. It does require a lot of care and attention and is susceptible to Roya (coffee rust) but is worth the effort!
About Natural Processing
After ripe coffee cherries are hand-picked, "natural" or "dry" processed coffees are dried on raised beds for 2-3 weeks as full intact cherries. The seeds are separated after drying. The sugars from the cherries contribute to a fruit-forward and full-bodied flavor profile. Pola's naturals also require zero water usage during processing.
